Pumpkin Muffins or Loaf

Cream – 1 cup butter, 3 cups white sugar, 3 eggs
Add one 14 oz can pumpkin, 1 tsp vanilla
Add 3 cups flour, 1 1/2 tsp salt, 1 tsp baking soda, 1 tsp baking powder
Add 1 tsp cinnamon, 1 tsp cloves, 1/2 tsp nutmeg
Optional 1 cup raisins

Bake at 350 for 20 minutes in muffin cups. Makes approx 30 muffins.

Bake at 350 for 60 minutes for loaves. Makes 2 loaves

I have substituted oil for butter.
