Mississippi Mud
Applesauce Muffins
Wayne’s Coconut Macaroons
200 ml of sweetened condensed milk
2 1/2 to 3 cups coconut (sweetened & flaked)
2 egg white (whipped to meringue)
1/2 tsp salt
1 tsp vanilla
Should be stiff enough to pile up in mounds
Drop onto well greased cookie sheet
Bake at 325 for 23-25 min.
Makes 2 cookie sheets
Once cool dip in melted chocolate
Apple Cake
2 cups sugar
4 eggs
3/4 cup oil
1/2 cup milk
1 tsp vanilla
3 cups flour
4 tsp baking powder
1/2 tsp salt
5 large apples
1 bsp cinnamon
3 tbsp. sugar
Bake 350 45 – 55 min; 9 x 13 pan
Diane’s black bean dip
MIX IN LARGE BOWL.
Mac and Cheese
- 1 tablespoon vegetable oil or extra virgin olive oil
- 2 tablespoons butter (I have just used olive oil before)
- 3 tablespoons flour
- 1 1/2 cups whole or 2 percent milk
- 3 cups white cheddar cheese, shredded ( I use a mix of cheeses, depending what I have on hand)
- red pepper pesto

1/4 teaspoon ground cayenne pepper,
- Salt
- 1 pound elbow macaroni, cooked; I use Detalini, the short tubes, either one works
- one small onion, chopped (optional) I cook the onion with the pasta
- breadcrumbs
- I have used Rosemary or oregano in my sauce
Slowly add milk while continuing to whisk. Gently heat the milk while stirring. Allow the milk to thicken a bit, then stir in two cups of shredded cheddar cheese a handful at a time. Season sauce with salt and pepper

Baked Oatmeal Breakfast
1/2 cup flour
1/3 cup brown sugar
1 tbsp. baking powder
1 egg
1/3 cup oil
1 mashed banana
vanilla 1 tsp
3/4 to 1 cup orange juice
bake for 40 min at 350
