1 small butternut squash
2 apples
1 onion
1 L chicken stock
1 cinnamon stick
1-2 tbsp oil
salt & pepper
Roast squash in oven. Saute onions, then add peeled & diced apples. Cook down then add stock and cinnamon stick. When squash is cooked, add it to the soup. Remove the cinnamon stick and blend until smooth.
update: cheese smells bad and this sounds terrible…
