- 1 cup brown sugar
- 1.5 cup butter
- 1 egg, beaten
- 1 cup flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp baking powder
- 1 cup oatmeal
- 1/2 cup coconut (optional)
- 1/2 cup raisins or chocolate chips
Drop on greased cookie sheet & press with a fork. Bake at 350 degrees for 10-15 minutes. I like to soak the raisins in boiling water for 10 minutes and drain.
